Seared salmon, baby tomatoes and chasoba

Another one of those super quick dinner recipe. I don’t think these took me more than 15 minutes to make, from start to finish. All you need are:
- Slice of fresh Lemon
- Extra Virgin Olive Oil
- Garlic Salt (or regular salt, whatever)
- Black Pepper
- Salmon fillet
- Chasoba
- Mitsukan Sesame Dressing
- Baby tomatoes
Marinade your salmon with lemon juice, garlic salt and black pepper while you heat up some extra virgin olive oil in your non-stick pan (high heat). Sear for about 3 minutes on each side and don’t forget to adjust the heat as you see fit. Also becareful not to overcook it! I like my salmon almost crispy on the outside, soft and slightly rare in the center. And.. that’s it for the salmon really.
For the side, I picked up a packet of chasoba (green tea soba) at the super market today so I was quite eager to try it. Just boil some salted water and chuck in the soba for 3 mins. Drain the hot water out and since I like them cold, I washed it with cold water before serving. quick, easy peasy and healthy!
Lastly I added some baby tomatoes on the side and drizzled some Mitsukan Sesame Dressing on top of the whole dish. I really swear by this dressing :9

Soba is officially my newest obsession. I looooove having them cold and al dente to bring out the nutty flavor. Did you know soba is also extremely healthy? The noodles are made from buckwheat seeds which are rich in fiber and protein but low in calories. Read more about the benefits of Soba here. Green tea soba? well that’s just even better since we all know how crazy good green tea is for your body :)
